Matlock was drafted by the Los Angeles Chargers in the sixth round, 200th overall, of the 2023 NFL draft.[4]

While primarily a defensive tackle at Boise State, Matlock also caught two touchdowns lining up as a tight end.[5] Prior to the start of the 2024 season, the Chargers under new head coach Jim Harbaugh listed Matlock as their starting fullback while continuing to keep him part of their defensive line rotation (akin to the Ravens' Patrick Ricard).[6]
